Here’s how the cheesy vegetables macceroni al ferretto recipe originated… It was 6 pm and I was immersed in work one day, I didn’t even realize that it was getting so late. I didn’t know what to make yet so I already knew that it was going to be a late dinner. I quickly stood up and ran to the kitchen to figure out what to make for us!
I had a big hunger for pasta and everyone knows that spaghetti is a meal which you can make very fast. I found some veggies, champignons and we have always all kinds of cheese at home. So I mixed all together, made sauce and toasted/broiled mozarella with smoked cheese on top. I thought you might like this recipe. It was very easy, not very heavy although I used a little bit of a cream and a few kinds of cheese.
We had a visitor that evening. My friend, Sue, came to show us her new car. So we had a dinner for three and everybody loved it. She asked about the recipe so i told her i would have to put it together on my blog 😀
Ingredients i found at home 😀
300-400g of good quality, dried spaghetti
7 champignons
4 large tomatoes
1/2 of light green zucchini
1 tbsp of butter
2 mozarellas
4 slices of smoked cheese
4 springs of fresh rosemary
aditional: 2 chillies
Nahrin salad spices ( This is from Swiss company Just and Nahrin but i believe that you can have your own choice and i will write what it contains so you can compare with some yours 😉 )
Cheesy sauce:
vegetable broth from frying all the veggies (It will help shorten the baking process because those veggies contain a lot of water, especially zucchini.)
100g creamy cheese spread
3 tbsp of sour cream
2tbsp of cream
1 tsp of Nahrin salad spices
Cut the tomatoes, zucchini and champignons into small chunks. Season them with the fresh rosemary and spices. Put them onto a large baking ceramic pan to bake it and evaporate the water. I extract the juices to a small pot where I’ll make the sauce later.
Cook the spaghetti in a big enough pot with salt water and olive oil until perfectly cooked (al dente) how spaghetti is suppose to be or how you would like it.
In the pot, melt the creamy cheese spread and add the sour cream, cream and spices to the broth. Cook it until everything gets thicker and is mixed well.
