For my husband’s 30th birthday, I asked him what he would like to eat. He asked if I knew how to make New York Cheesecake… the answer was no. This was going to be a challenge because I’ve never made cheesecake before. I had to figure out how to make it so I did some research and I found this New York Cheesecake recipe which is really incredible, it’s so fresh and light compared to other cakes.
Now I will show you how to make New York Cheesecake from scratch.
1 package Bebe biscuits
70 grams butter melted
4 yogurts 1600ml (Philadelphia Cream Cheese
250 grams sour cream
200 grams white sugar
1 vanilla sugar
3 tbsp plain flour
1 tbsp vanilla extract
half lemon – lemon juice + lemon zest
First, let’s make some cream cheese:
4 yogurt – 1600 ml

Get your bowl ready, put the strainer inside the bowl and cheesecloth on top. Pour out the yogurt on the cheesecloth and let it sit and drip for 24 hours in the refrigerator. You will get a lot of whey which is very healthy, so if you don’t mind the taste, mix it with some juice or drink by itself. Depends on your taste guys… but honestly? I won’t drink it regardless of how healthy it is! 😀
A day later…
After you’ve let your yogurt sit and when you are ready to start baking your cheesecake, prepare a springform cake mold and preheat the oven to 160 degrees celsius. Break the crackers or biscuits into fine crumbs. I’m using plain Bebe biscuits which are sold in Czech republic. Americans can use Graham Crackers. I used graham crackers in the US and it turned out amazing. So put the crushed biscuits to the springform and mix it with the melted butter. Bake it for about 8 – 10 minutes on 160. When it’s done let it cool down.
Now, we’ll put the cream cheese in a bowl and whisk/beat it at medium-low speed until creamy. With the mixer on low, gradually add the sugar, vanilla sugar, eggs, flour, sour cream, vanilla extract, lemon zest, lemon juice and blend it together. Put it into the oven and bake for about 10 minutes on 200 degrees celsius, then turn down the temperature to 90 degrees celsius and bake another 15-20 minutes. The cake is done when the center moves like jelly. The warm temperature will get the cake to the right consistency.
Garnish it with strawberries, peaches or raspberries.
