This dish is made with mozzarella cheese, potatoes and a lot of vegetables. You can make it as a lunch or also as a dinner. This can be a vegetarian meal but I used a little piece of bacon 🙂 So it’s on you whether to add meat or not. The very first time I made this yummy dish, my boyfriend and I were on vacation in Ghent, Belgium, the place where we first meet each other. I think this recipe won his heart 😀
So we needed:
- 1 kg potatoes
- 8 tomatoes
- 20 leaves of fresh spinach
- 1 onion
- 3 cloves of garlic
- 3 pieces of mozzarella cheese
- 100g of bacon
- 4 small chilli peppers (depends on you)
- coriander
- salt and pepper
First, boil the potatoes in their skin just before they begin to tender (I’m using fresh, inpeeled potatoes so the skin is very thin).
While you’re waiting for the potatoes to boil, prepare all of the vegies. Cut the onion, garlic and chilli into chunks and the mozzarella, bacon and tomatoes into thin slices. Wash the spinach and use only the leaves.
Heat the oil in your pan over medium high and fry the onion ( I used a fresh one along with the tops), garlic, chilli, coriander and pepper until fragrant. This will carmelize the ingredients which will bring out the flavor later.
When the potatoes are done, you should wait for a few minutes to cool them down and cut them into thick slices.
Preheat your oven to 220 degrees then turn down to 200.
Finally, let’s prepare the casserole. On the bottom layer, add half of the potatoes, half of your fried veggies, a few slices of mozzarella and half of the spinach. On the top layer, add potatoes again, the rest of the fried veggies, spinach and tomatoes. As you can see, we’ve got quite a big dish.
Put into your oven for about 30-40 minutes and after put mozzarella on the top and broil for 10 – 15 minutes.
