It’s been a while i’ve found something totally new, by “new” i mean something i’ve just found out about. This soup is absolutely amazing, especially the fried lime zest mixed with coconut milk which creates an interesting flavor.
Sweet potato lime soup is for those people who love thick soups.
2 garlic cloves
1 onion
1 lime
750 g sweet potatoes
100 ml vegetable stock
400 g coconut milk
150g baby spinach
salt and pepper
1 tbsp olive oil/coconut oil
Heat oil in a pot and fry garlic, onion and lime zest over a medium heat for about 5 minutes. Add sweet potatoes chopped in small pieces and cook for another 5 minutes. Add vegetable stock, coconut milk, lime juice, salt and pepper. You can also add some chilli if you’d like to. Bring it to boil, then reduce temperature and cook for about 15 minutes. With a hand blender blend the soup a bit. Finally add fresh baby spinach and serve immediately.
